When talking about Ysios Grano a Grano, it’s more than the vineyard itself—it’s worth highlighting the particular method we follow to select the grapes for its production. On this day, the entire Ysios team, along with our families, manually de-stem the clusters selected for this wine, grain by grain (or “grano a grano” in Spanish). This meticulous process results in a wine that represents the purity of Tempranillo and reflects the passion and care involved in its crafting.
Winemaking and Ageing
The 2021 vintage was defined by low rainfall and good weather conditions during the harvest period. Thanks to these conditions, the grapes were in excellent health and of high quality. It was a fairly warm year, with temperatures averaging 1 to 2ºC above normal. However, the year began with the impactful Filomena storm and a cold, damp January, contributing to a sufficient water reserve, with conditions significantly improving from spring onwards.
The key aspect of this wine is the bunch selection of Tempranillo grapes. They undergo manual destemming, grain by grain, into used 225-litre open-top French oak barrels with fine grain and medium toasting. Alcoholic fermentation, with gentle punching down, lasts for 15 days. Malolactic fermentation and ageing take place in these same barrels.
