“Iberiuli” Wines - A Tribute to Terroir and Tradition
“Iberiuli” wines are crafted using precise viticultural practices and low-intervention winemaking, allowing the full expression of the terroir and the unique characteristics of the grape.
The Qvevri, a traditional clay vessel that has been used for winemaking for over 8000 years, plays a central role in the process. In 2013, UNESCO recognized the Qvevri winemaking method as an intangible cultural heritage of humanity. The distinctive ovoid shape of the Qvevri is ideal for both fermentation and long-term aging, offering a unique environment for wine development.
“Sabane” Terroir
The “Sabane” terroir is located in the Kakheti PDO region, known for its rich winemaking tradition.
This 2.3-hectare vineyard is planted with Khikhvi, a native Georgian grape, with 11-year-old vines at a density of 3500 vines per hectare. The vineyard’s maximum production is 40 hectoliters per hectare, ensuring concentrated and flavorful grapes.
The soils are meadow-brown and mineral-rich, providing a solid foundation for the vines. Situated on the right bank of the Alazani River, at an altitude of 470 meters above sea level, the location enjoys favorable conditions for viticulture.
The winemaking process involves destemming and crushing the grapes, followed by alcoholic fermentation and skin contact for 5 months in Qvevri, allowing the wine to gain complexity and depth.
