Robert Mondavi’s To Kalon vineyard in Oakville is world famous and produces outstanding reds such as this dark forest-filled Cabernet. Rich and plush with plums, balsamic, vanilla and liquorice. The dry, refined, tannins would marry the foie-gras of beef rossini whilst truffle sauce would complement the depth of this wine.

To Kalon Vineyard Cabernet Sauvignon

The fruit for this wine came exclusively from our To Kalon Vineyard, which is located on prime benchland in the Oakville appellation. The well-drained, low-fertility soils and optimal sun exposure here enable the development of rich, complex flavors, impeccable phenolic maturity, and varietal character.

The wine is composed of 94% Cabernet Sauvignon, carefully selected from five of our favorite lots from this exceptional site. The balance is made up of equal parts Cabernet Franc and Petit Verdot.

This Cabernet Sauvignon showcases aromas of fresh black fruit, complemented by notes of chocolate, while the flavor profile features blackberry alongside red fruit. The wine presents an elegant, plush body, with beautifully integrated tannins and a lengthy finish.

Tasting
NOTES

Dark and intense forest fruits with a herbal strand on the nose are interwoven with secondary oak notes of chocolate, vanilla and cloves. Rich and plush on the palate (dark plums, balsamic, liquorice, violets) dry, refined, gentle extraction of tannins which are firm yet supple. Christmas spice, cacao powder and vanilla from oak adds tension with warming alcohol on the finish. Still youthful but charming.

PAIRINGS

This youthful Cabernet will best suit red meats; fillet of beef rossini that has the foie-gras to offset the dry tannins and a truffle sauce to complement the depth of the wine. Hungarian goulash would also work well.
