“Salome” Terroir - A Unique Expression of Saperavi
The "Salome" terroir is situated in the historic Didkure area, located in the Napareuli PDO. This land once belonged to the kings of Georgia and Prince Alexander Chavchavadze, a site of rich historical and cultural significance.
The vineyard spans 1.9 hectares, planted with 25-year-old Saperavi vines at a density of 2,650 vines per hectare. It produces a modest yield, with a maximum of 30 hectoliters per hectare, ensuring the fruit's concentration and quality.
Nestled on the southern, diluvial slopes of the Caucasus Mountains, the vineyard is positioned at 450 meters above sea level on the left bank of the Alazani River. The location is mineral-rich and surrounded by abundant wildlife, providing a natural environment that enhances the character of the vines.
The vineyard is farmed following biodynamic principles, with all vineyard operations performed by hand, including canopy management, green harvesting, and the manual harvest.
Once the grapes arrive at the winery, they are destemmed and crushed. Alcoholic fermentation begins in Vicard Foudre, specially crafted from 250-year-old oak with a medium toast, providing a unique fermentation environment. The fermentation takes place at temperatures between 23–28 °C, with regular pigeage (punching down of the cap).
Maceration lasts for about 12 days, after which malolactic fermentation takes place. Following fermentation, the wine is aged in 225-liter Vicard new oak barrels (medium toast) for 11 months, allowing it to develop complexity and depth.
This meticulous winemaking process results in a wine that reflects the distinctive terroir of the Caucasus Mountains, showcasing the unique qualities of the Saperavi grape and its rich, biodynamic heritage.
