As a young boy, Ivano's fascination with wine was kindled by watching his father craft homemade wines at home. This early exposure sparked an unquenchable passion that would shape his future. His journey in the culinary world began with a humble role as a waiter in a restaurant in Senigallia.

Cultivating Expertise through Education and Experience

To further develop his interest in the world of hospitality and wine, Ivano enrolled in the local Hotelier Institute. Balancing his studies with weekend and summer work, he gained valuable experience in various aspects of restaurant service, from room and bar service to wine expertise. His commitment to self-improvement led him to embark on a seasonal venture in Germany, where he not only refined his skills but also became proficient in the German language, enabling him to serve an international clientele more effectively.

The Evolution of Uliassi: A Culinary Masterpiece

In 1990, Ivano Coppari found his calling when he joined a modest seafood restaurant by the sea in Senigallia, known as Uliassi. Through relentless commitment, innovative experimentation, and a dedication to excellence, this once humble eatery has transformed into one of the world's most esteemed dining establishments. Even today, Ivano's role is pivotal as he guides guests towards thoughtful and deliberate wine choices that harmonize perfectly with the exceptional dishes and menus curated by Uliassi.

Honoured and Recognised: "Chevalier de Champagne"

In June 2023, Ivano Coppari received the distinguished honor of "Chevalier de Champagne" from the Ordre des Coteaux de Champagne. This prestigious award recognizes his tireless efforts in promoting wine and Champagne excellence, not only within the local community but also on the international stage. It further solidifies his status as an expert sommelier of unparalleled expertise.
