"Constancia and Rebollo" Foundation Soleras: A Tribute to Legacy and Terroir
The "Constancia and Rebollo" foundation soleras, aged in 95 butts, pay homage to the legacy of Manuel María González, the founder of the estate, and his uncle José Ángel. These soleras embody their vision, craftsmanship, and passion for producing exceptional wines.
The 1995 vintage benefitted from a summer and autumn marked by high temperatures, but the cellars’ natural ability to regulate heat created a perfect environment for aging. The spring-like winter was another factor that influenced the wine's evolution, encouraging the formation of yeasts' protective white mantle as early as February.
The result is a pale-yellow wine with a sharp, expressive aroma, which combines a wide range of complex scents—from citrus and spices to grass, leaven, almonds, chalk, and talcum powder. This blend of aromas is a stunning tribute to the albariza soil, the unique terroir of the region, and the grape’s life cycle.
