2021 was the warmest vintage since Casa Yagüe planted their vines in Argentinean Patagonia ten years ago. Naturally theirs is a lean style of Chardonnay, but one with butter and pastry hiding green apple fruit, lemon zest and yellow stone fruit, lactic and clove notes. Try with sea urchin pasta.

A Chardonnay Rooted in Terroir and Craftsmanship

The vineyards, planted uncultivated in 2014, are located on the very land where we live and craft our wines. The grapes come from our organically farmed vineyards, cultivated with low yields to preserve the harmony and longevity of each plant.

Vineyard & Climate

  • Training System: Royat cordon
  • Irrigation: Drip irrigation
  • Climate: Cold, with frost possible at any time of the season. Sprinkler irrigation is used for anti-frost protection.Soil: Well-drained sandy loam with organic matter on the surface and a riverbed composition of sand and stone in depth.

2021 Vintage

The warmest vintage since 2014, featuring high daytime temperatures contrasted by cool nights below 10°C, which allowed for slow maturation and intense concentration of aromas and flavors.

Winkler degree accumulation (Oct 15, 2020 – Apr 25, 2021): 923 degrees

Winemaking & Aging

This Chardonnay was pressed with whole clusters. Following alcoholic fermentation, it underwent malolactic fermentation during its 20-month aging on lees in first-use French oak barrels.

Our barrels are toasted with volcanic stones, enhancing the fruit and minerality of this unique terroir. This technique achieves a perfect balance of complexity and elegance that will evolve beautifully over time.

Filtered and bottled in January 2023.

Tasting
NOTES

A lean style of Chardonnay, but one with plenty of butter and pastry hiding lemon, bell pepper and green apple fruit. Lemon zest and yellow stone fruit on the palate - the flavours are lighter and more expressive than the nose would suggest. Fantastic, precise acidity gives freshness; lactic and clove notes are rounded and well integrated. Chalky structure, good length with a salty, stony finish.

PAIRINGS

This lean style of Chardonnay would suit creamy sea urchin pasta, or a traditional seafood paella, or kohlrabi served with a fermented white asparagus beurre blanc.
