Ripe fruit flavours are underscored with notes of citrus and brioche. Lean texture and a fresh acidity give great tension and mineral focus. Bright, long, elegant finish with hints of nuttiness and flint.

Sparkling wine and fish are a winning combination. This would marry beautifully with sashimi, oysters, or blinis with sour cream and trout roe. Vegetables work too - try with asparagus and beurre blanc.
