Eco-Friendly Vineyard Maintenance

They are 100% committed to sustainable, organic and regenerative farming practices. They integrate 1,500 head of sheep into their farming practices to manage the vineyard canopy, fertilize the vineyards and control the cover crop, which in turn helps prevent the spread of wild fires. They have planted Nero d’Avola partly because of its drought tolerant properties but also because it thrives in the dry, volcanic landscape.

Tasting
NOTES

Deep inky ruby hue. The nose is moderately intense showing ripe black fruit, black olives and Mediterranean herbs. Dense palate with amazing flavour intensity. The wine is fruit dominant but also shows different kinds of herbs such as juniper and rosemary. Delicate hints of oak add to the overall complexity. Very good balance and a long finish.

The attractive Mediterranean feel to this wine would suit breast of chicken with a garlic, butter and herb sauce. The hint of vanilla from the oak would complement the succulence of the chicken.
