It is rare to find wines from century old, pre-phylloxera vines but this intriguing and complex Verdejo from Castilla y León, Spain, is one such example. Reductive notes, aniseed, herbal aromas and asparagus notes make this a perfect match with fish served with asparagus, green mole or tomato sauce.

Barón de Chirel Verdejo Viñas Centenarias: A Tribute to Tradition and Excellence

Barón de Chirel Verdejo Viñas Centenarias is a unique wine, both because of the meticulous attention to detail during its growing cycle and the subsequent vinification process. It is made from century-old, pre-phylloxera vines, from the districts of Aldeanueva del Codonal and Aldehuela, in Segovia. These ungrafted vines are bush-pruned and harvested by hand. The wine is also aged on the lees for 6 months in small, Austrian Stockinger oak vats. This all goes to make for a superb wine with freshness, energy, and body, which receives its name as a tribute to Carlos Hurtado de Amézaga y Zabala, who modernized the family business during the post-war years.

Tasting
NOTES

A hint of reduction on the nose is followed by aniseed, grassy herbal aromas and asparagus notes. On the palate its fluidity provides a light bodied wine, less complex than the nose with chalky, hazelnut nuances. Bone dry, the acidic line persists on the lingering finish.

Linear and modest, yet with some interesting flavours that would pair best with fish dishes served with asparagus, green mole or tomato sauce and huauzontles.
