Not too many reds would complement haunch of venison with a bitter chocolate and cranberry sauce but this high altitude Cabernet Sauvignon blend from Cachapoal Valley in the soaring Andes of Chile is one. Full bodied with pronounced flavours of blackcurrant, plum, black pepper, tobacco and sweet oak spices. Yum.

Architectural Marvel: Vik Winery

The winery at Vik was designed by Chilean architect Smiljan Radic, a celebrated Pritzker Prize candidate. Set amongst the mountains and sweeping valleys with the soaring Andes mountains in the distance, the winery is thoughtfully designed to impact the landscape minimally. Its roof gives the impression of an enormous sleek white wing suspended over the underground structure.VIK_2020_WBSS24_1

The 2020 vintage of VIK is expressive, honest, genuine, elegant, pure and dynamic, as well as tense and vibrant. Its unique character showcases an exceptional vintage that delivers the most authentic expression of our terroir in Millahue (Cachapoal Valley). 2020 was a cool year; spring was inspired and verdant, while summer brought medium to high temperatures, enabling the tannins to ripen quickly and become crunchy and dynamic. Then, during an autumn of moderate temperatures without extremes, the harvest got underway, producing ripe fruit of a deep, dark colour.

Tasting
NOTES

Youthful nose, clean, generous and very intense. Overt blackcurrant, cherry and plum. Herbaceous note of blackcurrant leaf and a spicy black pepper aroma, then secondary aromas of toast, coffee and cedar. On the palate the wine is clean, dry with crisp acidity, a high level of fine grained and smooth tannins. Rich mid-palate texture, full body and pronounced flavours of blackcurrant, plum, black pepper, tobacco and sweet spices including clove and vanilla. Long finish.

Food
PAIRINGS

This is a wine that needs a dish with a lot of flavours. The richness and depth of venison would work very well, especially if served with a bitter chocolate and cranberry sauce to complement the accompanying notes in wine.
