Celebrating Excellence: Paraíso Wine
Paraíso is a celebration of only the best harvests and perfectly expresses the Arizu family’s knowledge and quest to capture the terroir of Mendoza over the last 120 years. This wine pays tribute to Finca El Paraíso, a transcendent estate with original genetic material from the first vineyard - a source of inspiration for many of the most important innovations and part of the historical and emotional legacy of the family.
Terroir Expression: Vineyard Sourcing
The grapes are sourced from three different sub-regions of the Uco Valley in Mendoza; Altamira 40%, Los Árboles 31%, Gualtallary 27%, with 2% from Vistalba in Luján de Cuyo. The average age of the vines is 20 years. Altitudes range from 1,000-1,200m.
Diverse Blend and Manual Harvesting
The blend comprises; Malbec 61%, Cabernet Sauvignon 26%, Syrah 8%, and Merlot 5%. The grapes are harvested manually, followed by bunch selection and de-stemming, and even subsequent berry selection. The grape juice is cold macerated at a temperature ranging between 8–10°C for five days. A percentage of the Malbec undergoes carbonic maceration.
Artful Vinification: Fermentation and Aging
The Malbec is then fermented in small stainless steel tanks, undergoing various extractions, such as plunging and rack and return (délestage). The Cabernet Sauvignon, Syrah, and the Merlot are fermented in rotary fermenters. Once the alcoholic fermentation is complete, part of the wine is aged between 12–14 months in French oak barrels and foudre, where it undergoes malolactic fermentation. Then the best barrels are selected to make the final blend. The wine is filtered and bottled.
Patient Maturation: Cellaring Process
Before launching the wine into the market, it is cellared for at least six months.
