Honoring His Grandfather's Legacy Through Concrete Fermentation and Ancient Techniques
Concreto is very important wine in the life of third generation owner and winemaker Sebastián Zuccardi. In his quest to pursue wines that express both place and region, Concreto looks back to his grandfather’s winemaking era. Fermentation and storage are carried out in concrete vessels without epoxy resin, to avoid the influence of aromas and flavours which do not come from the vineyard, and to amplify the texture of the wine.
Getting started was a challenge but he was determined to free himself from modern winemaking ties and so deepen his confidence in the place where his family have cultivated vines for three generations. Concreto aims to “undress” the wine - enhance its expression of the place and reveal the texture that the calcareous soils of Paraje Altamira which lies within the Uco Valley. Only the most stony and calcareous plots of this high altitude vineyard (1,100m) are selected and vinified as whole bunches, just as it was done in the past.
