Bin 707 is a perfect Cabernet Sauvignon representation of Penfolds house style; intensely flavoured fruit, completion of fermentation and maturation in new oak and a totemic expression of Penfolds’ understanding of multi-vineyard, multi-region fruit sourcing.

Bin 707 was first vintaged in 1964. The wine was not made from 1970 to 1975 (when fruit was directed to other wines) nor in 1981, 1995, 2000, 2003, 2011, 2017 or 2020 (when fruit of the required style and quality was not available). Full-bodied and with proven cellaring potential, Bin 707 retains a secure place among the ranks of Australia’s finest Cabernets.

Tasting
NOTES

Clear, bright, deep intense purple core shows its youth. The nose is very expressive. Menthol bursts out of the glass, behind which we taste cooked cherries, ripe plum and dried figs. Secondary aromas include coffee and toast. The palate is dry with a slightly sweet feeling, warming alcohol and very smooth tannins, all balanced by refreshing acidity and expressive flavours. Full body and very generous. Long finish.

Food
PAIRINGS

Pepper crusted fillet of beef with smoked bone marrow would shine with this wine. The pepper crusted juicy beef will match the spicy notes and depth of the wine, whilst the wine will benefit from the fat of the bone marrow to soften those tannins. Alternatively, game dishes would go well, in particular duck breast with a port sauce.
